Mango Kasaribath

Who doesn't like sweet  Suji Halwa and that too if you mix it with  mango 

Just wanted some twist in halwa so used mango in that rest of the recipe goes same as in suji halwa

For 3 servings 100gms of chiroti rawa
100 gms sugar or Jaggery
100 gms ghee
1 teaspoon of cardamom powder
water 2 cups 
Dry fruits make small pieces and fry in ghee and add it.

First fry chiroti rawa till you get the aroma.
Take an bowl add water and jaggery 
Once it starts boiling add cardamom powder and little ghee.
Later add rawa and then add mango slices.
Finally add cardamom powder and ghee

Once it starts leaving the edges of the vessel take out from the stove and serve hot poured ghee on it.

Baby Corn Dry........

Baby corn dry could be a best lunch pack or snack in the evening or you can also eat it with chapati


For 3 servings:
Preparation time will be 15 minutes.

Ingredients:
5 to 6 baby corn 
Corn flour about  half tablespoon----1/2 tablespoon.
Red chilli powder according to your intake of Chilli.
I have added 2 teaspoons.
Tamarind juice about one tablespoon.
I have added gojju powder which I had at home prepared and kept.
One can add any masala powder and add salt.
Onion and Garlic could be used I have not used it here.

Take a kadai and add baby corn and marinate it adding tamarind juice,red chilli powder, masala powder, and salt. Finally add the corn flour and marinate it. 
Take a Kadai, add oil and marinated corn to this and keep stirring, for 10 minutes once it is done, serve it with chapathi......or rice and this is the best one for lunch box.

Second method: You can also steam the corn and then marinate and fry

Millet for better health...........Replace white rice with Udalu(barnyard millet)


I started using millets since one and a half years, though it was not regular but now started with  almost for 2 meals a day prepared with millets, .....normally, it's difficult to change individuals food intake habits.
Anyone who is used to their normal diet will find it little difficult, but once the changes done, one can be happy with the results. my health has improved a lot.
I have heard many of them telling that, In olden days we never ate these millets, they were strictly used to have rice and they were healthy enough.
What I feel is the quality of products produced in olden days was without pesticides,  were so different from the products available today.
For barnyard rice cooking is same as rice 1:2 cup of water.
My Lunch consists
 Barnyard rice,  Amaranth stem sambar(Huli), Sprouted Green gram, Barnyard rice and Amaranth dry gravy is the best lunch to have.....

Groundnuts with coconut


This could be a snack or pack for kids snack break..............
Every morning we think of new dish, wherein we could make our kids eat it.......

Just felt that soaked peanuts could be a better option when you do not get fresh ones from the farm which is not dried.

Here I have soaked 150 grams of peanuts which is soaked in water overnight and used it in the morning.

Quantity is sufficient for three servings

Soak peanuts overnight, drain the water and pressure cook it with fresh water.
(salt could be added while cooking or later)
Once cooked drain it and keep it aside.

You need grated coconut about 50 grams
2 to 3 red chillies or green chillies
curry leaves
Asafoetida a pinch
Mustard and Jeera about 1 tea spoon each
Oil about 1 tablespoon

In a kadai add oil, add mustard once crackles add, cumin seeds, chilles, curry leaves and asafoetida.

Mix it well and later add grated coconut and enjoy........

Is this not simple try it........




Barnyard Millet with Rasam


Yet another post.............millet could be replaced with rice.
we do not feel hungry soon.........

Easy to prepare it.........

The above is Barnyard millet and I use it instead of rice.
50 grams of it could serve 2 people.
It is the same measure of water as we use it for rice, to pressure cook it. 
Enjoy it with any type of Rasam

Brinjal upma and Shira(sweet made of suji)

Brinjal Upma

Upma or uppittu could bemade of using many vegetables either  mixed vegetables or any one of the vegetable.
Here I have used only Brinjal.

For 4 to 5 servings
Preparation time 15 min 
cooking time 15 minutes


Ingredients
5 medium sized Brinjal which is chopped .
 Green chillies according to the spice you want 
Coriander leaves chopped about fist full
curry leaves few 
 200 grams of Rava which is roasted before 
Chana dal 2 teaspoons 
Asafetida pinch
Jeera and pepper powder 1:1 teaspoon
Mustard and cumin seeds about 2 teaspoons each.
(Optional)of about 100gms coconut grated


Take a kadai, add 1 tablespoon of mustard and cumin seeds, once they splutter add chana dal, curry leaves,  green chillies and asafoetida. 
Add Brinjal and leave it till it boils 
Add 1:1and a half cups of wayer shotwell that one is too true water.
Once it comes to boil add salt, jeera pepper powder
Once it comes to boil, add salt and suji, keep stirring and switch off the gas and 
 close the lid and leave it for 5 minutes.
Serve hot.....

 Sooji is a best combination for upma.
Halwa is always made of using white sugar but here I have used jaggery which give different taste.

 You need hundred grams of Charoti rava which is available as Bangalore Rava. Roast it in a medium flame.
 Take a kadai, take water 1:2 tablespoon of jaggery melted once it comes to boil add one teaspoon of cardamom powder 


 Once it starts leaving the edges, add little ghee and then switch off the stove and close the lid for few minutes and serve hot

Coconut Rice

This rice is similar to lemon rice, but here we use coconut milk and grated coconut, it is the secret behind the good taste.




 Ingredients

 2 cups of rice,
 2 cups of grated coconut,
1/2 cup of coconut milk

Tempering 
Oil for tempering 
Mustard seeds 2 teaspoons
Groundnuts one tablespoon,
Ground nut seeds 25 grams 
Red chilles 2 to 3nos
Curry leaves 4 to 5 strands
Chana dal 2 tea spoons
Cashew nuts 10 for taste
Asafoetida a pinch

Method

Keep  250 gms of rice in the cooker,use coconut milk instead water to cook rice..... rice must not be too sticky..... keep it aside

Take a kadai, add oil, add mustard seeds once crackled, add chana dal, and groundnuts, cashew nuts, red chilles,curry leaves, asafoetida and then saute it till its done. Mix the cooled rice......and serve it with Avial or any curry.



Bread Pizza


As kids get attracted to junk food, we can try our best to create few home made snacks cum breakfast for them.........this was prepared by one of my friend Meenakshi who is a mother of my daughter's classmate......felt interesting and tried it at home.......

All you need for 4 servings one pound of bread (sweet) sliced...
Preparation time is less than 15 minutes.......
Serving while takes 10 minutes......

One pound bread
Onion finely chopped 1 medium 
Tomato Finely chopped 1 medium
capsicum finely chopped 1
Salt to taste
Butter 100 gms
Cheddar Cheese 50 gms
Oregano 2 tea spoons
Red chili flakes 2 teaspoons
Tomato sauce home made or you can buy it outside

Take bread slice and apply butter on it, 
spread vegetables chopped,
sprinkle salt, oregano and chili flakes, if one needs more flavor use more of oregano and chili flakes.

Finally, heat the pan keep the slice on it and grate cheese on it and close a lid and leave it to melt and serve it hot spreading sauce on the bread slice.

Be happy, when your kids are happy eating this...........
